Hi Suzanne, there is an adjustment lever (in the shape of a ring pull) at the top of the headrest. This allows you to adjust the headrest higher and also moves then height of the shoulder straps up automatically when pulled and slide upwards. This will move the headrest upwards and will accommodate a growing baby.

Are Jane interchangeable eg can a crosswalk seat go on a trider base?

No, Each pushchair seat unit is designed for their particular chassis. This is so they can fold with the chassis and are also stable, as some chassis and pushchair on the Jane range are higher off the ground than others.
The Jane car seats can go on different jane chassis or pushchair, but not the pushchair seat units.

I purchased the Epic, Micro, Koos bundle 4 years ago for our 1st baby. Would this car seat fit on our existing isofix base and chassis?

The Koos R1 iSize will fit onto your pram (EPIC) as they connect using the PROFIX system. Which both the car seat and chassis have built-in.
However the Koos R1 uses the latest I-Size isofix base, called the 'iPlatform Comfy'. The Koos R1 won't fit onto your older base or any other car seat base, however it can still be installed in a car using the seat belts.

Not sure what you mean by 'car seat cover' so if you mean the seat upholstery; then yes its included and also the head support and harness chest pads etc.
If you mean the canopy/hood; then yes this is also included.
If you however mean the Raincover; this is an optional extra.
